Dry:
1 1/2 cup all purpose flour
1 cup oat bran
1 tsp baking soda
1/4 tsp salt
Wet ingredients:
1 cup soymilk
4 tsp apple cider vinegar (combine and let curdle)
1 large egg
1/2 cup unsweetened applesauce
2 TBS sugar
1 TB canola oil
1 tsp vanilla extract
Zest of one orange
2 cups fresh blueberries
Combine wet and dry ingredients separately then combine together. Add blueberries. Bake at 350 for 20 min.
